14k Sweet Potato Pie

3/4 cup butter, softened
1 cup sugar
1/2 cup brown sugar
3 eggs separated
4 large cooked sweet potatoes mashed
1 1/4 tsp vanilla extract
1/2 cup whole milk
1/4 cup heavy cream
3/4 tsp nutmeg
3/4 tsp ground cinnamon
1/2 tsp ground ginger
1/4 cup sugar
1 unbaked 9 – 1 inch pie crust

  • Pre heat oven to 350.
  • Cream butter and sugars with an electric mixer. Beat until blended, add egg yolks and beat until smooth.
  • Whisk in sweet potatoes, vanilla, milk, cream, nutmeg, cinnamon, and ginger.
  • In a separate bowl beat egg whites until foamy. Slowly add 1/4 cup sugar and beat until stiff. Fold into the sweet potato mixture.
  • Pour into pie crust, bake about 40 minutes until firm.
